Double Chocolate Chip Pudding Cookies

This recipe results in the perfect balance of chocolate sweetness and cookie gooeyness. If you’ve never added pudding mix to your cookies (like myself) it’s time to start!

Prep & Personalize

cookies ingredientsMost of the ingredients are probably lying around your kitchen and pantry, so you can literally whip these up at any time.  Don’t be afraid to add your own personal twists. In this case, I substituted vanilla pudding with cheesecake flavored pudding… yum! And if you want to add peanut butter chips instead of white chocolate chips, do it!

Mix It Up

cookies whiskWhen mixing the ingredients together, this recipe found on Pinterest is very specific as to when to add each ingredient. But BEWARE, there is no warning as to what tools to use.  Although you can use an electric mixer or whisk to mix all the wet and dry ingredients, a spoon will work best when mixing in the chocolate chips at the end… unless you like getting cookie dough out of your whisk. Once you’ve got everything mixed together, just roll them into small balls (just a little more than an inch in diameter) and place them on a cookie sheet.  Bake at 350 degrees for 10 minutes and get ready to enjoy some pinperfect cookies. *This recipe was able to make just under 30 cookies.* cookie dough

French Toast

Quick & Easy Home Cooked Breakfast…

Some days you’re just in the mood to have a warm, home cooked breakfast. Pancakes, French toast, cinnamon rolls, you name it; they all sound pretty appetizing, but can take up a significant amount of time and effort.  Well thanks to Pinterest, here’s a quick and easy recipe for some classic French toast. Another bonus to this recipe: it makes two pieces of French toast, so you don’t have to worry about what to do with leftovers if you’re just making breakfast for one.

french toast ingredientsOne of the nice things about French toast is that the ingredients are pretty basic, so you probably have everything you need lying around in your kitchen. Simply whisk together your eggs, milk, cinnamon and vanilla extract, and you’re ready to start dipping your bread! Don’t forget to start heating up your pan (or griddle) while you mix all your ingredients. Although the recipe says to heat your pan to medium-high, it might be best to cook your French toast at a medium to medium-low heat so that you can cook the French toast through and not just burn the coating (I learned the hard way).

If You Know What You’re Doing

french toast dippingWhen dipping your bread, try not to let the bread soak in the egg mixture. Although the recipe simply said to dip and coat the bread, I let it soak in the mixture for a bit and I’m pretty sure that’s what made my French toast a little unappetizing (this was also my first time ever making French toast).

Once you’ve dipped your bread, lay it on your pan and cook both sides until golden brown. Add some syrup and sprinkle on a little powdered sugar (of which there was none in my pantry) and enjoy! Quick and easy French toast that is ready to enjoy in just minutes. Unfortunately, I wasn’t a big fan of the taste, but you already know why. Bacon-Wrapped Beer Meatloaf

When you start thinking of Southern comfort foods, a nice meatloaf might cross your mind.  If you never had meatloaf growing up, you have been deprived! It’s a pretty simple dish to make and can be tweaked for your taste buds. In this case, a recipe for “beer meatloaf” caught my attention when searching through Pinterest.

Then try kicking this recipe up a notch and wrap the meatloaf in bacon! YUM! Turns out, the bacon not only tasted delicious, but it really helped keep all the juices in the meatloaf and prevented it from drying out. Also, don’t worry about using all the meats used in this recipe; if you’re not a fan of veal or ground turkey, then just stick to ground beef or ground pork.

Glaze

This glaze is pretty spectacular as well. It’s just the perfect balance between sweet and tangy. If you’re not too sure about it, then just cook the glaze in a small pot or sauce pan on your stove top, and pour it over your piece of meatloaf later. But between the beer, the bacon, and the ketchup-based topping, this meatloaf makes for a pinperfect dish. Add some mashed potatoes on the side, and you’ll have a real comfort meal.

Brownie In A Mug

Have you ever had those nights where you’re in the mood for a sweet treat, but don’t want to go through the time and effort of making the whole cake? Well imagine coming across a pin that teaches you how to make a brownie in a mug! It’s the perfect single serving for a little self-indulgence, and takes less than two minutes in the microwave. Sounds too good to be true right?

If you like to bake, then you’ll find that the ingredients are probably always stalked in your kitchen. The prep-time is very quick, and the recipe does not call for any eggs. Just measure, mix, and pop it in the microwave.

Not So Sweet

When I took my brownie out of the microwave, I was delighted with the results and couldn’t wait to taste it. Unfortunately, this single-serving treat did not live up to my expectations. The consistency was good and very fudgy (not sure if that’s a word but you get it), but the taste was far from sweet.

Perhaps it needed more sugar, or maybe some brown sugar, but it would have probably been more satisfying to just take 30 minutes a make a whole tray of brownies. Maybe you really shouldn’t take the easy way out… at least not when it comes to dessert.

But perhaps not all single-serving treats in a mug turn out as failures. I would love to hear about any desserts you’ve tried in a mug that have come out absolutely pinperfect.

Chocolate Covered Strawberries

If the Easter Peeps S’mores, didn’t satisfy your sweet tooth (you must have a GIANT sweet tooth), then maybe this bonus Easter treat will be the perfect addition your holiday spread. It’s just a simple twist on delicious chocolate covered strawberries… or so I thought.

On Pinterest, these chocolate covered Strawberries, made to look like carrots for the Easter bunny, looked very appetizing and super simple. However, unless you’re an expert when it comes to making chocolate covered strawberries, this treat can become a major flop.

Chocolate Troubles

First off, white chocolate is a lot sweeter than regular chocolate and getting it to the right consistency was a little tricky. But once you’ve got your chocolate melted, just use food coloring to get the chocolate to just the right shade of “carrot orange.” The next step is to dip the strawberries into the chocolate. Sounds simple right? Well getting the chocolate to cover the whole strawberry (and make it look like a carrot) is pretty difficult, unless you want to lose your strawberry to the chocolate.

Overall, these chocolate covered strawberries were a nice treat and will definitely add to your Easter spread.  The idea of making them look like carrots for the Easter bunny is very creative and will attract both kids and adults. However, don’t expect your strawberries to come out looking pinperfect. Happy Easter!

Easter Peeps S’mores

For everyone celebrating Easter this weekend, you may have been trying to find some new treats to enjoy with family and friends. Of course there’s tons of cakes, cupcakes, and anything involving Easter eggs, but why not try something different for Easter?  Eventually, I found something on Pinterest that caught my attention right away… peeps s’mores!

Who didn’t love making s’mores as a kid? Whether in front of a fire, or over the stove top, you can always have fun making this deliciously messy treat.  It’s simple and it’s a classic. So finding an Easter version was pretty exciting.  Instead of using a regular marshmallow, you use an iconic, colorful Easter peeps.

A Little Too Messy…

I decided to go with the bunny peeps, but the little chicks will do too. This specific pin says to build your s’more (chocolate and peep stacked between two graham crackers), and then microwave for 20 seconds. If you follow these directions, you might find that the marshmallow peep comes really close to exploding in your microwave (who would have wanted to clean that up?).  Ten to fifteen seconds will probably melt the chocolate and the marshmallow peep to just the right gooeyness.

But Finger-Licking Good!

But even with super-sized peeps, these Easter s’mores are extremely tasty. The pop of color that the peeps add, and their sugar coat, really make these s’mores pinperfect. You’ll definitely feel like a kid again trying to eat this deliciously messy treat. You might want to enjoy your peeps s’mores after some Easter egg decorating. Happy Easter!

Cookie Monster Cupcakes!

So every year for my boyfriend’s birthday I try to make him a fun cake or dessert. Even though he’s in his 20s, he really is a kid at heart, so his birthday treat has to be reflective of that. So last year I decided to make him Cookie Monster cupcakes! Yepp, Cookie Monster- as in the Sesame Street character.

When I came across these cupcakes on Pinterest, I thought to myself, “this could either go really well, or end up being a disaster.” I looked through several different versions of Cookie Monster cupcakes and overall the execution and idea seemed pretty quick and easy.  So I was determined to make them a success.

How-To

All you have to do is bake the cupcakes (I chose chocolate), cut a whole for the cookie to fit into, and then decorate. I made the blue icing from white icing with food dye, and put it in a makeshift piping bag- just a simple zip-lock bag and cut the very tip of the corner off. Be sure to put the cookie in the mouth before you ice the cupcake so you can ice and holes around the cookie. The eyes are just made from white chocolate melting candies, and the black is food gel pen I got in the baking section of my local grocery story.
